    Step back in time to the opulent court of LOUIS XV and experience the taste of Royalty Introducing the ‘Puits d’Amour’ jam , a gourmet treasure  unearthed by Confiture Parisienne and exclusively available at Chez Roger. This extraordinary preserve is a testament to the enduring allure of French pâtisserie and a perfect gift  for those who appreciate the finer things in life. The History Named after Louis XV's cherished mistress, Marquise de Pompadour , the 'Puits d’Amour' was once a well-kept secret. This luxurious dessert was filled with a jam so extraordinary , it was reputed to be unparalleled. As time passed, the original recipe was lost and replaced with a more common filling. Parisian jam  and Antoinette Poisson  are linked by the original creation of a jam. In fact, Antoinette Poisson was the real name of Marquise de Pompadour, the Favorite (official mistress) of Louis XV, who commissioned his finest pastry chefs to create the most delectable dessert  especially for her. This dessert was the "Puits d'Amour," a cake that held at its core the finest jam  of its time. The secret of the original recipe was lost as the Puits d'Amour came to be made with classic pastry cream. It remained forgotten until Confiture Parisienne unearthed the secret of this magnificent recipe, which had not been altered since the time of Louis XV. Confiture Parisienne has embarked on a mission to revive this forgotten delicacy. After meticulous research, they have successfully recreated the ‘Puits d’Amour’ confiture using a blend of currant, raspberry, and violet. The result is a harmonious symphony of flavours  that is as enchanting as its history. Wishing you a sparkling New Year 2025 from the Roger family! 🥂✨ To kick off 2025 in true French style, let's delve into a beloved tradition: La Galette des Rois. This delightful almond cake is a quintessential part of the Epiphany celebrations, marking the arrival of the Three Wise Men. A Slice of History The tradition of the Galette des Rois dates back centuries . Originally, a bean was hidden within the cake, and whoever found it was crowned "King" or "Queen" for the day . Today, a tiny porcelain figurine, often a charming fève depicting a historical figure or a whimsical creature, takes the place of the bean. A slice of traditional Galette des Rois reveals a hidden figurine within its layers, adding a playful element to this French Epiphany dessert. The Thrill of the Hunt The unveiling of the Galette des Rois is always a moment of excitement . The youngest member of the household traditionally hides under the table while the cake is cut. Each guest receives a slice, and the lucky recipient of the fève wears the crown and enjoys special privileges for the day . A classic Galette des Rois adorned with a golden crown. Traditionally, the Galette des Rois is enjoyed on Epiphany Day , which falls on January 6th. This Christian feast day commemorates the arrival of the Three Wise Men bearing gifts for the baby Jesus. A Recipe to Warm Your Soul Making your own Galette des Rois is a rewarding experience . While you can certainly find delicious versions in French bakeries across Edinburgh (and beyond), there's something truly special about baking this treat at home. Here's a classic yet simple recipe to get you started: INGREDIENTS For the frangipane:    * 100g unsalted butter, softened    * 100g ground almonds    * 100g icing sugar    * 2 large eggs    * 1 tablespoon almond extract    * 1 tablespoon flour For the pastry:    * 250g plain flour    * 125g unsalted butter, cold and cubed    * 1 egg yolk    * 2-3 tablespoons ice-cold water For decoration:    * 1 egg yolk, beaten    * Icing sugar, for dusting (optional)    * A porcelain fève (can be replaced by a bean or an almond) METHOD   * Make the pastry:   In a large bowl, combine the flour and butter. Use your fingers to rub the butter into the flour until the mixture resembles fine breadcrumbs.  * Stir in the egg yolk and gradually add the ice-cold water, mixing until the dough comes together. Wrap the dough in cling film and chill in the refrigerator for at least 30 minutes.   * Make the frangipane:   In a separate bowl, cream together the softened butter and icing sugar until light and fluffy. Beat in the eggs one at a time, then stir in the ground almonds, almond extract, and flour.   * Assemble the galette:   Roll out two-thirds of the pastry on a lightly floured surface to a circle about 3mm thick. Transfer the pastry to a baking tray lined with parchment paper.  * Spread the frangipane evenly over the pastry, leaving a 2cm border.  * Roll out the remaining pastry and use it to cover the frangipane. Trim the edges, press down to seal, and crimp the edges with a fork.  * Make a small slit in the top of the pastry to allow steam to escape.  * Brush the top of the pastry with the beaten egg yolk.  * Place the fève inside the cake.  * Bake in a preheated oven at 180°C (160°C fan) for 25-30 minutes, or until golden brown.  * Allow the galette to cool slightly before dusting with icing sugar (optional). How to enjoy it? Serve it warm or at room temperature , ideally with a glass (or a traditional bowl) of French cider.   • Elevate your holiday gatherings with Homemade Gougères!

    Gougères are one of our favourite French appetisers and the perfect accompaniment to a glass of fizz. They're easy to make, and their versatility allows for endless flavour combinations. These airy choux pastry cheese puffs from Burgundy are often served with Kir  (a classic French cocktail usually made with a measure of Crème de Cassis and white wine, Champagne, crémant or cider) as part of the apéritif. The two are a truly sublime combination! INGREDIENTS (Makes a minimum of 16)  * 125ml milk  * 100g butter  * 150g flour  * 150g grated Comté cheese  * 4 eggs  * Pinch of nutmeg  * Optional: smoked paprika or cayenne pepper METHOD 1/ Prepare the Dough : * In a saucepan, combine milk, butter, and 125ml water. Bring to a boil. * Quickly whisk in the flour until a smooth dough forms. * Cook over medium heat for 2-3 minutes, stirring constantly, until the dough pulls away from the pan. 2/ Incorporate the Cheese and Eggs : * Remove the pan from the heat and stir in the grated Comté cheese. * Let the mixture cool slightly, then gradually beat in the eggs one at a time, ensuring each is fully incorporated before adding the next. * Stir in a pinch of nutmeg and, if desired, a sprinkle of smoked paprika or cayenne pepper. 3/ Shape and Bake: * Preheat your oven to 190°C (375°F). * Line a baking sheet with parchment paper. * Using a spoon or a piping bag, drop dollops of the batter onto the prepared baking sheet, spacing them about 2 inches apart. * Sprinkle with additional grated Comté cheese. 4/ Bake to Perfection: * Bake for 9 minutes, then reduce the oven temperature to 180°C (350°F) and bake for an additional 9 minutes. * Important: Avoid opening the oven door during baking to maintain a consistent temperature. 5/ Serve Immediately : * Remove the gougères from the oven and let them cool slightly before serving. * These are best enjoyed warm, so serve them promptly. ET VOILÀ ! Tip : For a truly indulgent experience, serve these gougères with a glass of Champagne or sparkling Crémant and a wedge of Comté cheese.
