This rich and slightly spicy tomato sauce, enriched with brandy, white wine, butter and cayenne pepper, is a classic French accompaniment to fish and seafood dishes. The calamari can be enjoyed hot or cold. They’re especially good shared with friends at apéritif time or eaten tapas-style alongside other Basque delicacies. But they also make a delicious and simple meal served over rice.
